HOMEMADE KETCHUP

HOMEMADE KETCHUP – proven recipe for a real homemade ketchup.

 

HOMEMADE KETCHUP

Ingredients:

  • 2 kg of ripe tomatoes
  • 2 red peppers, if making hot ketchup use 2 chilli peppers
  • 5 onions
  • 4 cloves of garlic
  • 150 ml vinegar
  • 4-5 tablespoons of sugar (I used brown)
  • 4 tablespoons of oil
  • 2 tablespoons of salt
  • 1.5 teaspoons of marjoram
  • 1 teaspoon of pepper

Preparation:

Take off the skin from tomatoes, peel onions and slice them all. Cut peppers, discard seeds and membranes, peel garlic cloves. Toss all the above ingredients into a large saucepan, place it on medium heat, and bring to simmer. Continue to cook, stirring occasionally, on low heat for about 2 hours. When the vegetables are well cooked and the liquid has evaporated, strain your mixture through a fine mesh strainer. Add all the seasonings: salt, pepper, marjoram, oil and sugar, all to your liking. Transfer your ketchup into jars and pasteurize them (about 15 minutes after water boils).
