MY MOM’S CREPES

MY MOM’S CREPES –I learned them from my mom and I used to make these crepes for my kids when they were small.




 

MY MOM’S CREPES

Ingredients for the batter:

  • 1 ½ cups of wheat flour
  • 1 cup of milk
  • 1 cup of water (e.g. carbonated)
  • 1 egg
  • 3 tablespoons of oil
  • ½ teaspoon of salt

Ingredients for the filling:

  • ½ kg curd or farmer’s cottage cheese
  • 1 egg yolk
  • 2-3 tablespoons of thick cream
  • icing sugar as desired
  • pinch of salt
  • 1 teaspoon cinnamon
  • 3 tablespoons raisins
  • A little fat, to fry the first pancake cake (e.g. oil)




Making batter:
To the high pot add 1 ½ cups of wheat flour, half a teaspoon of salt and 1 egg. Pour over a glass of milk, a glass of water and 3 tablespoons of oil. Mix all well to the homogeneous mixture and set aside for 30 minutes.
Making cheese filling:
Puree cheese in a food processor; add egg yolk, 2-3 tablespoons of thick cream, icing sugar at your discretion, a pinch of salt, 1 teaspoon of cinnamon and 3 tablespoons of raisins.
Mix all ingredients thoroughly.

Make crapes from you already done batter. Coat each crepe with cheese filling and roll them up. Fry assembled crepes on slightly buttered pan till crispy. From this ratio you will get 14 pancakes with a 20 cm diameter.
