DANDELION HONEY – dandelion honey has many therapeutic qualities. This wonderful weed soothes cough, is full of vitamins A, B, C, as well as minerals, such as potassium, magnesium and iron. Dandelion helps improve the immune system, has anti-inflammatory properties and stimulates the nervous system. Be sure to pick dandelions far from the roads that have not been exposed to pesticides, fertilizers or other chemicals. Try not to pick any parts of the stem as it has a bitter taste.
- 0.5 kg of dandelion heads
- 1 l of water
- 1 kg of sugar
- 2 lemons
Spread the dandelion heads on white paper and set aside (about 1-2 hours) to get rid of any bugs. Have a second look before placing them in a pot.
Put all dandelion heads in a large pot, add previously washed and sliced lemons, and add water. Bring to boil and cook for about 15-20 minutes. Remove from the heat and leave the pot covered for 24 hours, to let all dandelions “goodies” infuse to the liquid. Strain dandelion mixture with cheesecloth and add sugar to the remaining liquid. Boil uncovered on low heat for 1.5 h – 3 h to a syrup consistency. Pour your ready-made honey into sterilized jars and turn them upside to seal.
Makes three to four (250 ml) jars.
