STUFFED BELL PEPPERS




 

STUFFED BELL PEPPERS

Ingredients:

  • 3 large red bell peppers
  • 1 onion
  • 100g of rice
  • 300g of mince meat
  • 100g-200g of medium flavoured cheese for grating or ready grated we’re using Gouda cheese
  • 2 spoons of cooking butter
  • Pepper
  • Salt
  • Mejoran
  • Bunch of parsley (chopped finely)




Preparation:

1. Start by preparing the red bell peppers for stuffing. Cut the tops off the peppers to create lids, set the tops aside. Scoop out the pepper seeds and discard.

2.Cook rice ‘al dente’.

3.Peel the onion, chop into small pieces and sauté on butter. When onion is “glossy” add mince meat of your choice and fry until brown on medium heat. Stir to cook evenly. Then set aside.

4. Next in a large bowl combine cooked rice, fried minced with onion, salt, pepper, mejoran, chopped parsley and grated cheese. Mix well until all the ingredients are incorporated.
Stuffing is ready.

5. Next arrange the pepper shells in an ovenproof dish drizzled with butter, spoon the stuffing mixture into them. Place the ‘peppers lid’ on the peppers. Cover the ovenproof dish, if it doesn’t have cover use baking foil.

6. Preheat the oven to 200°C/400°F/gas mark. Bake 30 minutes, remove the cover or foil and bake for another 10 minutes. Enjoy.
