SPONGE CAKE BABKA 




 

SPONGE CAKE BABKA

Ingredients:

  • 250 g butter or margarine
  • 1 cup sugar
  • 5 eggs
  • 1 cup of flour
  • 1 cup potato starch
  • 1 tablespoon of baking powder
  • 1 tablespoon cocoa
  • Icing sugar for sprinkling
  • oil and bread crumbs to grease tin




Preparation:
Bring the margarine or butter to a saucepan and heat until completely melted. Remove the saucepan from the heat and cool it off. Separate the whites from the yolks. Beat the egg whites to stiff peaks, then gradually add sugar and egg yolks till they are evenly incorporated.
Sift together the flour and baking powder. Gradually add flour to the egg white foam and gently stir in. Finally add a cooled margarine. 
 Grease the tin and sprinkle with bread crumbs (silicone molds do not need to be sprinkled with bread crumbs). Pour the ¾ of your batter into the tin, to the remaining batter add cocoa and mix it. Pour it over the white batter.
Bake at 170 C for about 35-40 minutes. 
Cool it and then sprinkle with icing sugar.
