SAVOURY PUFFS WITH HERB FILLING

Ingredients:

For choux pastry:

  • ½ cup of water
  • ¼ margarine cubes (63 g)
  • ½ cup of wheat flour
  • 2 eggs
  • pinch of salt
  • 2 tablespoons of grated Parmesan cheese

For Stuffing

  • 250 g ricotta cheese
  • 2 tablespoons of thick yogurt
  • ½ bunch of chives
  • ¼ bunch of parsley
  • 2 garlic cloves
  • 4 radishes
  • salt, pepper




Preparation:
Mix flour with salt. Place margarine and water in a saucepan and heat it up to combine the ingredients, and then add all the flour into the saucepan. Blend it quickly and well (still heating up) until it becomes smooth and shiny. Remove the saucepan from the burner and add eggs one at the time and blend it until you get a smooth paste. Finally add parmesan cheese and mix together. Transfer the dough into a baker pipe or baking sleeve (you can also use two spoons) and pipe the puffs on the baking sheet previously lined with parchment paper (keep the distance between puffs as they grow during baking). Bake at 200° C (390°F) for 15 minutes. Remove from the oven and cool, but when they are still slightly warm cut them horizontally in a half.
Wash radishes, chives and parsley, dry and chop very finely.
 Mix ricotta cheese with yogurt, chopped chives, parsley, radish, minced garlic, salt and pepper to the smooth consistency. Fill the puffs with your cheese paste (put stuffing on the bottom of the puff and cover with the other half).
