PERFECTLY TENDER PORK KNUCKLE

PERFECTLY TENDER PORK KNUCKLE

Marinate ingredients:

  • 2 litres of boiled cooled down water
  • 2 spoons of salt
  • 2 tea spoons of sugar
  • 2 spoons of wine vinegar
  • 1 tea spoon of thyme
  • 1 tea spoon of rosemary
  • 1 tea spoon of chilly pepper
  • 3 garlic cloves
  • 1 medium onion
  • 1 bay leaf
  • 4 whole allspice
  • 4 whole black peppers

Meat:

  • 1 kg pork knuckle

You will also need:

  • Water for boiling
  • Salt
  • 1 bay leaf
  • 2 whole allspice
  • 1 carrot
  • Piece of celeriac
  • 1 parsnip
  • 1 spoon of lard

Preparation:

1. Step one, marinate. In a pot combine boiled, cooled down water with wine vinegar. Add salt, sugar, thyme, rosemary, chilly pepper, bay leaf, allspice and black pepper. Mix well. Add chopped onion and garlic. Mix well again.

2. Add the pork knuckle, cover and set aside for 2 days to marinate. Turn over occasionally.

3. After two days of marinating remove the meat and discharge rest. Place it in a clean pot, add water until the pork knuckle is fully covered.

4. Add bay leaf, allspice, chopped carrot, celeriac and chopped parsnip.

5. Cook covered with a lid on medium heat until soft and tender.

6. Heat up the lard in a Dutch frying pan or pot, transfer carefully cooked pork knuckle and brown the meat from all side. Meat is ready to serve. Enjoy.
