HEALTHY SPRING SOUP

HEALTHY SPRING SOUP – delicious and light, vegetable soup

 

HEALTHY SPRING SOUP

Ingredients:

  • 1 carrot
  • 3 cucumbers
  • 4-5 potatoes
  • 3 radishes
  • 2 young onions with chives
  • ½ bunch of dill
  • 1 ½ liter of vegetable broth
  • 1 tablespoon butter
  • salt, pepper

Preparation:

Peel, wash and cut carrot and potatoes (potatoes diced, carrots in half slices). 
 Wash cucumbers, peel and cut into cubes (about 1 cm). 
 Wash radishes and cut into thin slices. 
 Boil the broth in a pot, add the potatoes and carrots and cook for about 10 minutes, then add the cucumbers and radish. 
 Wash the dill, dry and chop it finely. Clean, wash and chop onion and chives.
 When the vegetables in the pot are already soft add dill, chives with onion, butter and season it with salt and pepper. Boil the soup for another 3 minutes.
